LEN (me) TIL you about a new series we’re starting: “Foodie Friday“. My Mom always says “soups are easy” because she knows I’m always on the search for a quick-fix meal. Mya really likes a store-bought lentil soup, but at $3 / can and with her massive appetite, it was getting expensive! So, I did some online research and threw something together– simple ingredients and packed with the iron/magnesium/fiber/protein superfood: lentils.


Mya approved, so it’s Mom approved! Next time, I may steam the carrots before adding them to the soup to make them even softer and add more heartiness to the broth.  Also might throw in some spinach, zucchini, or whatever else we have in the fridge– the “use-what-we-have-before-it-goes-bad” mentality. You moms know what I’m talkin’ about! What are some of your quick-and-easy-to-make soups?

    Great minds really must think alike! 🙂 I made almost that exact soup last week. Mine was loosely based on this recipe. The little bit of bacon really did add great flavor. It was really nice to just throw it all in the crock pot. And it freezes well. Winning! Haha.

      I would’ve never thought to add bacon– nice touch! Now I’m craving a BOLT (BLT + onion). 😉
