So I have this friend who lives in Dallas. I’ve mentioned her before. She is the sweetest gal you will ever meet. Her name is Alexandra and she has a beautiful food blog: Alexandra’s Savory Kitchen. I browse her posts– usually late at night when I’m looking for a tasty snack. But I have no leftovers even remotely as delicious as any of her recipes, so I just end up eating popcorn. Womp womp. One of the things that I’ve been craving recently is fish! We are pretty sure Mya is allergic, so we haven’t had it in our house for awhile. But hey, if there’s a weekend that Mya will be at NanaPapa’s, then you can bet your butts I’ll be making this delectable meal! And because Alexandra will do anything for anyone, she agreed to let us feature some of her recipes. The plan is to post one of her savory meals once a month. For her first featured recipe, we chose her Tilapia with a Mango Avocado Salsa. Um. Yum…



Hey, guys. This is Alexandra and I’m happy to share one of my favorite recipes! I love white fish with an avocado salsa of some sort. Delicious! This time I made a mango avocado salsa. The sweetness of the mango with some heat from the jalapeno paired perfectly with the fish. I put the fish on top of a jalapeno garlic Israeli couscous. If you can find a box at your local grocery store, I definitely recommend it for this dish. It paired very nicely.

Mango Avocado Salsa:
1 mango, diced
1 avocado, diced
1/2 jalapeno, diced
1/4 red onion, diced
1 garlic clove, minced
1/4 cup cilantro, chopped
1 tomato, diced
1/2 lime, juiced

2 Tilapia Fillets
Tony’s seasoning
1/2 lime, juiced
olive oil

1 box jalapeno garlic Israeli couscous

RECIPE (serves 2)
Mix the salsa ingredients together delicately so you don’t smash the avocados too much. Set aside and let sit. Meanwhile, heat your oven to 400 degrees. Lay tilapia fillets on a baking sheet. Sprinkle with tony’s seasoning, pepper, lime juice, and some olive oil. Bake for 25 minutes. Make couscous according to package directions. To plate… add couscous, then fish and tope with a heaping mound of mango salsa. So good.

Total time: 45 minutes
