We have nothing profound here, people. And my cooking friends (and mother!) are going to roll their eyes on this post because it’s just egg salad. But sometimes we (or maybe just I!) forget about the simple, classic, inexpensive recipes… like a good ol’ fashioned egg sandwich. So that’s what we made with our hardboiled Easter eggs– and it was delicious!
12 hardboiled eggs
2 celery stalks, chopped
1 tsp onion powder
1 tbsp pickle relish
1/4 cup mayo with olive oil
2 tbsp honey dijon mustard
salt + pepper to taste
1. Refrigerate hardboiled eggs for at least 2 hours.
2. Use egg slicer to dice up all 12 eggs.
3. Combine all ingredients (except bread) in bowl and softly fold together with a spoon until thoroughly mixed to make egg salad.
4. Spread egg salad over bread to make sandwiches. Toast if you prefer.
Truth be told, though– we didn’t paint eggs until after Easter. I couldn’t get my act together until then. But since Mya seems to think that every day is Valentines’ Day, she could’ve cared less that we prolonged the Easter rituals. I thought I had some egg dye, but as it turned out, I didn’t, so we used washable paint and Q-tips.
I suggested making some polka dot eggs (hence the one purple dotted egg below.) But Mya had “a better idea” and just smeared the colors all over. Super easy, minimal supplies, and something she could do all by herself for a good 30 minutes. Self play for the win!
